Pioneered in 2012, Eastside Distilling was the first to ever use Quercus Garryana Oak barrels, known locally as Oregon Oak , to finish a whiskey. We take our award-winning Burnside Bourbon and continue the aging process for another 30-120 full days in 59-gallon charred Garryana oak barrels, adding bold new flavors to our already great-tasting bourbon.  Oregon’s diverse climate grows this rare, drought-resistant, difficult-to-season oak that was primarily used by vintners for its softened tannins and natural sweetness.  Our unique use of Garryana oak lends a nuanced layer of flavor you’ll want to take your time with – sip after sip, neat or in a cocktail with a “twist”.
